A great addition to my kitchen

What can I say? This is the Mauviel heavy copper Jam Pan at an exceedingly good price. As you would expect the thick copper spreads the heat very evenly, I have used it six times, producing a rapid set with great results and no burning. A word of caution though. Being copper it is sensitive to the acid in fruit. You shouldn't macerate the fruit in it (particularly overnight), and I add the sugar and the fruit to the pan at the same time, to reduce the discolouration and taste problems. Superb for the larger quantities, although I still use a wide flat stainless pan for one pot jams.

does not measure up to expectations

I bought this copper pan with expectations of higher heat transfer than my stainless steel pan. However for some reason it heats up much slower than stainless steel pan which is 4 times cheaper. I use ceramic hobs, so perhaps the reason could be not entirely flat surface which would impair heat transfer. The bottom of this copper pan is very thin compared to the stainless steel pan. The low heat transfer really makes this product unusable for jams since its nearly impossible to achieve rolling boil. I use it only for apple butter making where slow boiling is needed. The pan looks beautiful, but nearly useless
